Gargoyles werent really Deamons... and yes they grew up in time of Bloody warfare but they were protectors and guardians, not DPS warriors.
It wouldn't matter. Battle is battle, war is war. Granted there are differences between defense and attack, but the pure physical and visceral experience tends to impart similar lessons either way.
Plus you got guys in a Dark ages mindset dropped into the modern world.. where even basic stuff to us is Magic to them...
There would be momentary disorientation, yes. But the minute you fire a shot at them, adrenaline kicks in and survival instinct takes over. Also, they come from a world that actually
has magic—it wouldn't take them long to think "oh this gun thing is just a new version of a Staff of Fireballs" and plan accordingly.
The Gargoyles, simply, would
not have been as confused, put off or as threatened as Disney's writers would lead you to believe. Technology does not inherently make you superior to people who have training and (often life-or-death) experience on their side.
Anime and WA are simply to different mediums in which to tell a story, stop acting like one is better then the other. it' all your OPINION on which you prefer. It's like trying to compare a sitcom to a police drama and say one is inherently better. YMMV
I'm not trying to say one is better. I'm just trying to explain why (in my opinion, I'll admit)
