@JT - Mythological beings are usually created by people associating qualities of existing animals and mixing them. Snakes, bulls, boars are very popular in this regard. It is rare for mythologies to feature creatures that doesn't have any feature of existing animals, as far as my understanding goes.
Were there any bipedal animals Equestria? I can't recall the details.

I don't think you can get an image of human from dragons, though. As far as physical attributes are concerned, human are pathetic. Since all ponies are quite sentient and some quite intelligent, no one would imagine being like a human.
