I'd put Soarin' as older than the mane cast, but not old enough to be considered middle aged. Like maybe upper 20's or early 30's to the mane cast's early 20's.
He's not an idiot, he's just kinda goofy. We just don't see enough of him to know whether his pie thing is typical of him.

Dash still needs to practice some things, maybe? She as sure has the speed, but what about other stuff?
Remember, she crashed around quite a lot when she had stage fright, but was able to overcome it in the end.
However, that doesn't mean she is completely rid of it.

Something about not being a good team player etc,
also, speed isn't everything. Dash can be suprisingly clumsy in the air.

She's fast but not necessarily as skilled as them. Plus she seems a trifle impatient. She probably will eventually. Maybe there will be a huge series finale where she joins, the CMC ponies get their cutie marks, and Fluttershy turns into a tree.

Fastest? Maybe. Skilled? Maybe. Reliable? Hell no. She can do some impressive stunts, but Sonic Rainboom proves that she doesn't do well under pressure. She's good, but not consistently good. RD has the skill to make it, but she needs a lot more practice, patience, and team spirit.

Actually she does very well under a different kind of pressure.
And it was Celestia herself that said she was the fastest, at the very end of [[trike:RAINBOW STALIN]]SONIC RAINBOOM and I really want to see a Rainbow Stalin Pony Mix, there's more than enough "communist pony" material laying around for it to work.

Why does everyone say she's the fastest, has that ever been explicitly stated?
The sonic Rainboom is more a gimmick than a mark of speed. I'm sure many ponies can break the sound barrier

Also RD has too high of an opinion of her skills. She isn't able to accurately assess how good she is, and she can be a very sore loser.

No other pony seems capable of breaking the rainbow barrier. And it is described as legendary.
Of course, there could be ponies faster around a race track. And in Fall Weather Friends, AJ was actually a second faster than Dash in the race, but she was penalised 5 secs for clipping a barrel.
