I wonder how many times Rainbow's tail has ended up in Applejack's mouth?

Btw, I've been wondering: how many Wonderbolts are there? The only named ones I know of are Soarin and Spitfire, but considering this fandom names everypony I assume there are more. And since they're based off of the Blue Angels, which are technically part of the U.S. Air Force, does that make the Wonderbolts Equestrian military?

Well, I think the most we've seen on screen at once is five in Sweet and Elite. Two of them are clearly Spitfire and Soarin, with two of the other three being Rapidfire and Fleetfoot, whough we don't know which is which. There are also a few other unique Wonderbolt designs that weren't present there, like the one people like to think it Surprise.
