On the subject of Rainbow Dash, this

was one of the first FIM clips I saw online, and I was misled by it, because Rainbow Dash looks really damn humanlike in it. She doesn't even have a muzzle.

My favorite gesture (I know, I'm cheating) is either Rarity's stompy fit or Fluttershy's awkward hoof-thing just after she lands when Twilight introduces herself. I don't know what to call it, it just... it's cute.

Well, I'm pretty sure the intent was that the wings could be used as a general indicator of mood, and there's no reason to assume that doesn't extend to arousal.
