Unicorns probably have the capital solely by the virtue of occasionally producing one pony with unlimited power.

I'd like to see a Unicorn that's really creative and precise with telekinesis, like molecular level precise.

Sensory illusions? Like modifying your voice, creating sound effects, 3D Holograms, maybe even actual smells to make the story more immersive.

So, now I want to know what would happen if the rest of the mane 6 were unicorns. How would their powers work, I mean. I guess Rainbow could make anyone go super fast? Fluttershy could translate the speech of animals into English? Applejack could have one giant apple magnet? Pinkie could detect whenever anyone was sad and needed a party?

I still think that it's not a single spell or whatnot you get, but something you happen to have a knack for. Other spells can be learned, but it's easier to learn spells that are already related to your knack. So Rarity could easily branch out and specialize in dowsing, since she has a natural knack for finding gems. Spells related to finding (and on a larger scale, summoning) would be relatively easy for her to learn compared to, say, polymorphic spells, which Twilight seems talented in.

Think of unicorn's learning spells like a human learning, anything. Barring some mental handicap there's really nothing stopping a person from learning about any field they want, but some just have an easier time understanding certain things. Same with magic

possibly. but again just like with people sometimes there are things that a person/magic a pony, just can't seem to understand, while the same thing comes easily to another.

For example. I will NEVER be an olympic athlete. Nor will I EVER have a phd in medicine. Different types of magic are as easy to learn as different skills are in real life

You might never be the best, but unless you have a disability, it's quite possible to be an athlete, or specialize in medicine.

you just have to want it enough, and be willing to put in the time.
