@Ace: 2 reasons for that:

1. She is best pony.

2. She's probably the easiest to draw; her mane is really simple and I don't have to worry about wings or curls or hats or anything. I'd like to draw more of Rarity, but I tried sketching her once and just doing the mane took me about twice as long as everything else combined.

It's still pretty slow. Even this thread is much slower than it used to be.

More on Celestia, as she is best pone:
- She knows all the languages. In her spare time (and she's had a lot of it over the past millennium), she's familiarized herself with every language spoken today, a few dead languages (that were still around when she learned them), and some non-pony languages just in case.
- Over the centuries, she's built up a tolerance to alcohol. (All the fine wines she's had to sample must've gotten to her.) She couldn't get drunk even if she wanted to.

She probably has some familiarty with lots of languages, but there's no way she can keep up to date on all the new words and slang. I think she'd end up like Luna if she tried to speak most languages.

I hope that's a typo, or that's some pretty depressing advice.

@Roy It's not canon in that they have a relationship now, but Rarity realizes Spike has a crush on her, and somewhat reciprocates.

We actually had a user leave because she thought this episode advocated adult/child relationships.

Rarity knows about it :V

I always considered Spike's growth spike to be a lingering aftereffect of the wild magic-induced gigantism he had shortly after hatching in Twi's entrance exam all those years ago.

Rarity's acknowledgement and reminder to him produced a very minor and localized Harmonization that purified Spike of his unnatural premature growth spurt, reducing him back to his true biological age.
