I think you be reading into things too much. Simply put, "Mares and Gentlestallions" just isn't as catchy.

I think in the ponyverse, filly and colt are equivalent to girl and boy.
Well, even if they are equivalent to boys and girls, people do still refer to adults as boy or girl, from time to time. Just because in a lot of situations it sounds better than man or woman.
