Earth Ponies are clearly your frontline foot trooper, Unicorns are your archers or tactical support, and Pegasi are your cavalrymen and skirmishers.

@ilse Well, the mane characters in both of the primary FOE stories are unicorns. The addition of levitation ALWAYS seems to give them an edge. It really is broken

To me, unicorns are fit for precision work, like building machines, and in battle would be a Squishy Wizard.
Pegasi are, obviously, weather workers and would probably be either Fragile Speedsters or Glass Cannons, depending on if they're fast or strong.
Earth ponies are very durable, since they're good at manual labor, and are probably Mighty Glaciers.

@Chad That's actually make sense to me. The Royal Guard's usual functions include tasks like opening doors, pulling carriages through the sky, and other ceremonial things. Earth Ponies can't really do either of those. Now, in a more practical army rather than a ceremonial one, I'm sure there would be plenty of Earth Ponies thanks to their strength and endurance.
