My best guess is that Twilight simply wasn't aware of anything that happened while she was turned to stone. She didn't even know it happened until after the fact. So it would basically be like passing out and then coming back. It would be weird to realize that you were a statue for a few hours, but there are more traumatic things that could happen.

So we know they technically have hoofs, even though we cannot see them (stylization). ...Yet, Rarity's feet could wrinkle like a prune if soaked in water too long, like flesh! ... Rule of Funny and lampshade-handing, I suppose, but it's still perplexing.

Makes me wonder why the Cockatrice has the ability to unstone someone. Lions don´t have the power to bring their prey back from the dead, and rattlesnakes can´t negate the poison within an animal´s system after they bite.

Also, why did it take so long for the Cockatrice to stone Fluttershy?

^Maybe there's something to the idea that cockatrices can't eat stone and have to reverse the process to eat their prey.

As for why it took so long: Fluttershy's Stare is so powerful it can negate baleful magic.

Any magical creature is likely to have some sort of natural magical resistance - like how putting two radio emmiters at different frequencies nearby is probably going to mess with the frequencies a bit - But a lot of the time I've seen petrification there's been some element of will involved. Twilight was pretty clearly surprised by the Cocatrice, but Fluttershy saw it coming and was ready for it, so she could probably fight it at least a bit.

^True, but I don't think the ponies count as magical for the setting - even pegasi. Unicorns, definitely, but not the other breeds.
