Yes, yes it would.

Many of the islands in the Florida Keys are in fact made of limestone since they lie on dead coral reefs. In fact in most of south Florida you don't have to dig far to reach limestone.

There should still be limes though. They are well known in the keys to the point were they are named after a fairly popular dessert, Key Lime Pie.

Possibly. My hometown was built on top of a shitton of Limestone that used to be underwater, and there are definitely places in the old quarry high enough they could have been islands.

Alternatively the town could be built out of limestone, which is a decent enough building material. Most of the older buildings were Limestone, for obvious reason.

Yeah, Limestone Keys would work well. It makes practical sense and has a nice double meaning when there's both limestone and actual limes.
