A Ponibooru commenter pointed this out, I checked, and it's true: Colgate has a stethoscope, so she's a doctor, not a dentist. (You can see it at around 14:24, when Luna turns the bowl of fake spiders real.)
She could have been resting and recovering her power. If her mane is anything to go by, she's stronger now than she was right after getting friendship'd. Maybe she just spent the last year taking a nap.
I bet she was recovering from being hit directly by the Orbital Friendship Cannon.
Actually, she looks visibly taller, too, so I guess it makes sense if she's been back for a year or more.

I expect fan guesses on what Fluttershy felt on Nightmare Night and what she was actually DOING in that cottage, and what Rarity eventually settled on for a costume. ..... 3 days later.
