Or AJ's really bad at holding onto barns and it's just a running gag. Lose one to the parasprites, build one offscreen that's so poorly kept it has to be destroyed a year later. Build a new one Pinkie ruins with her mural and is destroyed offscreen so she has to build another.

They still have their house.

Well, the Apples probably have side-jobs in different markets to protect themselves if there's a sudden glut of apples in the market and the value goes down.
