Celestia was drunk off her arse when she decided that was a good idea.
The zebras looked upon the abominations, and killed them all. Enraged, Celestia cursed them so that they may only speak in rhyme.
And that's why you never see alcohol in the parts of Canterlot Castle Celesta frequents.
Luna's calmer drunk, surprisingly.

Something about the cat ponies rubs me the wrong way. And I love cats.
Then, as an act of defiance, the zebras incorporated rhyme into their early culture, refusing to let Celestia believe she had bested them. They formed the most amazing medical cures and vaccines, and gave them to all, zebra, pony and even griffon. The great minds of the day travelled to zebra lands, eager to learn the secrets of zebra medicine.
Obviously, this is before Celestia mellowed out after the
War of Lunar Aggression, and became the ruler she is today.
