I actually mentioned that I thought Fluttershy's foil should be very harsh to her animals and train them mercilessly, but still ultimately love them at the end of the day

Are we trying to think of "evil" versions of the cast, or just non-villain characters who contrast sharply with them? If it's the latter, Fluttershy's foil would probably somepony with who's also shy, but is terrible with animals and really into technology. Like a gearhead or something.

A character that contrasts with the main casts' personalities, but not like an "evil" counterpart, just a similar character that have key contrasting differences.

We're imagining a squad of similar but slightly different versions of the mane cast who act as enemies and sometimes allies to them. A group of rivials basicly.

Right, this is more like regular ponies that just happen to have similar interests except in certain areas. Like Rarity's foil would run a shop that sells mass produced clothing. The character isn't evil, but they'd have a similar interest to Rarity (clothes), but done in a way that's in opposition to the way Rarity does it.

Nope, more like alternate universe versions, or dark/shadow versions. Except they're normal ponies, who happen to be the exact opposite of the Mane 6.

Maybe a sort of Musclehead dragon? Spike is much more academic and sleeps a lot, so his foil would be physically inclined and really active. A "get up at 6 am to go the gym" kind of person.

x 4 Nah, more like a bunch of otherwise decent ponies who clash with the mane 6 because of personality differences, but who actually have quite a bit in common.

Like Foil! Rarity for example, is a generous artist, but one who works as a blacksmith, making metal their medium. They are frequently filthy, and are also quite vulgar.

I could imagine Foil!Twilight and Foil!Spike's relationship being kinda like Fire-Forged Friends. They became friends while withstanding something awful.

Wheras, Spike and Twilight have ALWAYS had each other

Since Normal!Twilight is kinda on the wimpy side, it would make sense that Foil!Spike and Foil!Twilight are muscleheads. Maybe they're beefcake-y males? Foil!Twilight dropped out of school and is trying to become a pro wrestler, and Foil!Spike is his best bud. Chest-bumping ensues.

Also, whereas Twilight is both well organised and a good planner, but loses her mind when that plan dosn't work;

Foil! Twilight is very hap hazard, but also VERY good at keeping their cool and thinking on the fly.

I do like the idea of a meathead. Maybe they were in the school on a sports scholarship?

Let's see, what would foil Scootaloo be like? Perhaps she would be more laid back and would think things through more critically. Wait... wouldn't that make foil Scoot and normal Scoot be like a Blue Oni and Red Oni? I wonder what would happen if the two interacted?

Ah, forgot about the CMC. Hm, let's see.

Foil!Scootaloo would believe in herself, to the point where she trusts no one else.

Foil!Applebloom would be prissy and stuck up, like Silver Spoon and Diamond Tiara.

Foil!Sweetie Belle would be a Deadpan Snarker and think her older sister was an idiot.

Also, Foil!Twilight might get along with Big Mac well. Would Foil!Big Mac be like Blueblood?

How about their town gets destroyed by parasprites, and they have to move to Ponyville while the town is rebuilt? And their town could like Shelbyville.

There needs to be like a whole foil town that has like alternate versions of the casts. Like Mr. and Mrs. Cake's foils run a health food store or something.
