Well he can change his shape, so he probably just has a preferred sahpe constructed out of mixed up creatures for the lulz.

You know as much as the episode implies that Discord is a true god figure and a primordial force of nature, he never really comes across as more then a demented Mister Mxyzptlk to me.

It really is the difference between being omniscient and omnipotent. Discord is the latter, not the former. Combine that with a tendency to play with his victims, and he pretty much sets himself up to be defeated. I doubt he really cares that much, though. He's immortal, after all, and will get another go at it sometime. It's just a silly game to him.
I don't think I'd say he's omnipotent, at least not in the classical sense. There's definitely a limit to his abilities. He's really really powerful; likely the most powerful in the setting, but I don't think he even comes close to omnipotence.
Cherilee's description implies he is part of a species, but it doesn't make sense if he is. OF course you know what he says about making sense.

I'm guessing that since he's basically a mythological figure, they probably treat it as a species even though he's the only one. Sort of like how we treat pegasi as a species despite the fact that in Greek mythology he was a unique case.
I like to think of him as an Elder God that manifests aspects of himself on lower planes every once in a while for giggles.
Well, the Draconequess could be an in-universe mythological creature, whose appearance is based off the real Discord.
