Its About Time was okay, but not that memorable. The jokes didn't seem executed to their full potential and, while I like Twilight's neuroses, the episode seemed a bit too much like a light Lesson Zero.

Sunning your coat makes it lighter rather than darker, hair bleaches paler in the sun.

Maybe the toy is from before she sunbleached.

Celestia originally was that pink. A thousand years of literally being the Sun has bleached her coat down. Cadence spending time with her in Canterlot has also been subject to the same sunbleach effect.
