The weirdest thing about mapping out Equestria is probably going to be the fact that pegasus cloud cities are mobile. Combine that with a rapidly expanding frontier and any maps drawn of the country are likely to become quite inaccurate very quickly. They probably stick to smaller, local maps like the one Granny Smith had, or to globes that show the static geography of the world.
