I think romance depends on whether they're focusing on actual character dynamics or just sappy kissy faces and soap opera. Both are usually saccharine but one is at least endearing and depthful as such.
As for a new main character, I find it more likely they'd boost a minor member into a Breakout Character than make a new one from scratch. The Cutie Marks are leaning into this, and arguably Big Mac a little.

I want an expansion on THE CLEAR illect background romance between Big Mac and Caramel.
I mean it's obvious they've had a major falling out, hence why Caramel no longer works at Sweet Apple Acres, but we need DETAILS!

Big Mac could possibly work as a Silent Snarker, a character that interacts via expressions and acting more than words, eg. Gromit. With the odd "Yyyyyep" thrown in of course. For some reason when I think of a prominant role for Big Mac I actually see him acting like Beleaguered Assistant to Applejack or Sweetie Belle or something.

I occasionally like romance but I rarely seek it out. The only romance stuff I can think of that I really liked were Spice and Wolf and The Sharing Knife saga.
