I have an idea to round out my scientific trio...a mighty earth pony expert in all the mythical beasts of this world...manticores, chimeras, cockitrices etc...Manly! Fluttershy basically...with an Austrailian accent.

As long as they fit the definition of an animal, yes. Otherwise, they'd be plants, fungi, bacterial colonies or whatever.
