She also attempted to be stealthy in "Over A Barrel" and failed mainly because of Pinkie.
She tries to use stealth a lot more than you'd think she would, doesn't she?

So if Spike had ended up staying with the dragons... would Twilight have to figure out how to teleport the letters to Celestia by herself? Or would she fall back on the Pony Express mail?

@Ginger: My theory is either what isle said, or that Twilight didn't want to bother Celestia if she didn't have to, so she decided to research it herself first. She would have sent a letter in the morning, but Spike decided to join the migration and she never got a chance.
