It might work like the way things used to be...a young boy is sent away to the castle of a knight as a page boy at the age of eight. At the age of twelve, he becomes a squire, a knight in training...and trains in all knightly stuff until the age of 18-20, were they are knighted and join an Order. With their own castle etc.
