Didn't he talk in Winter Wrap Up? I haven't seen the episode yet but doesn't he say that Caramel lost the grass seed? And possibly say "Eyup" at the end?

He says "uh, AJ?" then Applejack asks if Carmel lost the seeds again. So it sort of counts as a line.

Someone needs to compile a list of all his lines and appearances and see what his conversation average is.

well, they had him record a few more lines for season two, at least. Whether they're just different generic lines, or he's getting a bit bigger role in an episode, we'll have to wait to see. But I'd love it, personally.

Also, wasn't there something a while back that was discussing Spitfire and Soarin'? What was that about? I was getting vibes of they'd become minor characters, but I could be wrong.

We've had Two Pony episodes.

We've had Whole Mane Cast episodes.

We've had an Applebloom episode.

We've had CMC episodes episodes.

We've had a Mane Cast and CMC episode.

We've had a Spike episode.

But no Big Macintosh episode.
Because "for the lulz" is a perfectly good reason to do something.

Well if Rainbow Dash is going to keep idolizing the Wonderbolts, and I don't see why she wouldn't, giving them actual personalities allows for more plots than interchangeable suited ponies we only see from afar. I'd be surprised if we didn't get at least one episode in season two where they play a major role.

As for Big Mac, yes. We need more of him.

Basically, there are quite a few occasions when 2 characters are onscreen exactly as the names of Jayson Thiessen and James Wootton come up in the credits.
