So, horses:

Three of them - Carter (a large Clydesdale Draft Horse that pulls their cart of stuff, hence his given name), Charger (a medium-weight horse bred for war, in light barding, hence his name) and Book (a run-of-the-mill horse that can read a bit and make marks and glyps, hence her name).
Horses are not typically named until they discover their talent - their version of a cutie mark. Other names include Blacksmith, Baker, Dyer, and so on. As such, their flanks are blank. They're mostly earthen tones, brown, tan, white, ivory, mixes of that.
To keep them cartoony, they'll be able to stand (although not for long) and use their forehoofs for manipulating stuff so they appear to fit in MLP canon.
They'll look a lot more like actual horses, though, in terms of outline.
Carter is mild and soft-spoken with a rich legato baritone voice, and rarely speaks. He takes a liking to Fluttershy immediately, but likes to hang out with "little" Big Mac. Charger is hot-headed, quick to interject, but defers to Book's leadership. Book is the Mare, and in charge of the group. She is curious, inquisitive, and intelligent. Despite her smaller size than the Stallions, she still towers over the ponies.
Applelight: Yeah, a Horse would look like a much larger version of Big Mac.
