What I believe is, she'd cheek him in a manner like I already described, but once he snaps the notebook shut, squares up to her (he's much bigger than her btw), points a big warning hoof at her, and says quite seriously you're on thin ice pony, she back down in a huffy, pouty sort of way.

I say split the difference. I would find it kind of boring if either side won every time. Though I see their escalating attempts at one up each causing much property damage in the future.
