If I had to guess, I'd say it's because violin making is an obscure field where the job pool isn't big to begin with, and since materials are expensive, they don't want to risk people screwing up. Then again I'm just speculating.

Most jobs will ask anywhere from 2-5 years experience for an entry position. It's good to bear in mind that the stuff they put online is ideal in a candidate, but not completely necessary. If I were a slightly better scriptor, I could have gotten a job that required five years experience.
Of course, my industry isn't yours, etc., so I'm not sure it's the same deal.

I can't say I'll be much help. The job I have now is literally the first one I applied for. I had no work experience in copy writing before I sent resumes.
