If I was running a group that all wanted to be clerics, I'd either tell them all to change or just give up and make it a gestalt campaign.
I'd just up the ante with enemies resistant to Clerics.
I like a varied party. If everyone's doing the same thing, it gets boring.

Clerics are a Tier 1 class. They can do anything. And besides, just because you all have the same class doesn't mean you have to build your characters exactly the same. You can still have a varied party.

Well, a wizard and a rogue. I can't imagine what a 15-man game would be like, especially if 13 of them were fighters.
