I doubt throwing in bits and gems would work with a mirror anyway, and besides, they'd just run into the same problem that happens whenever an alchemist or magician tries to make gold: Hyper inflation, economic crash, hardship for all.

Well you can replicate gold with a fabricator, but what's the point? The most valuable things once you reach replicators is information, not materials.

Still, history has shown us that having more of something doesn't necessarily make it more valuable: Case in point, WW 1-era Germany, which instead of raising taxes during wartime just decided to print money, which caused the mark's value to go down.

I doubt that the whole "return it to the pool" thing would even work on something not created by the pool, or at the very least, on something that interacted with it. Really, I doubt Twilight could have zapped the real Pinkie if she wanted to. It's just a case of "better safe than sorry".
