You're overlooking the point that she agreed to being turned into a statue so she could be admired forever.
Both of their deaths were inevitable at the point in the second story; Spike was dying and couldn't refresh the magic on Rarity; she would have "died" as well. They may as well do it in each others' company.

She was turned into stone voluntarily, and she and Spike die together once he reverses the petrification. The ending just has to be read to be understood, though...

The Collection of My Centerpiece. It focuses on Spike when he's a fully-grown dragon, showing off his most treasured possession - Rarity, who had herself petrified so she would never age and could be beautiful forever.
He dies at the end of
The Collection, when he's well over several thousand years old.

My point is, it's impossible to experience
Earn Your Happy Ending or enjoy a good bit of catharsis from reading a summary of something. =)
