Well, the ponies do prance around utterly naked, most of the time. It's quite the feat of Peek-A-Boo that we never got to see anything. No, this is beyond that, that's Nerves of Steel, it is. Colts have probably gotten used to thinking of the mailman everytime Rarity's around, just so they don't make a spectacle of themselves in public.

You know, even as a kid I knew not to look at those parts too much... the asshole, on the other hand... you can't miss the asshole, mostly because you get to see shit coming out of it live: horses, unlike, say, cats or dogs, can poop while they walk without even slowing down.

Yup. Horseback riding. A naturalistic experience.

You always hear about the Males in Ponyville having the hots for Rarity, yet we haven't seen anyone react to Fluttershy in the same way, even though she's supposedly just as, if not MORE beautiful than Rarity

Well, since they do run around nude most of the time, it'd just become the norm. Nopony would bat an eye, because all the bits are usually visible. Foals would just grow up being all "whatever" about it.

The reason Photo Finish didn't pick Rarity was because Rarity was a designer, not a model.
