I'm guessing the Big Mac episode got axed because he's too reticent of a character; he's so untalkative that I can't really imagine an episode based entirely around him. The other reason is that the extended Apple Family has already gotten an enormous chunk of attention this season; we've had an Apple Bloom episode, a Granny Smith episode, we have a few Applejack episodes coming up, and it sounds like the Valentine's day episode is going to have more Apple Bloom and Big Macintosh. They might have simply thought that giving the family another focus episode was a bit much.
Y'know...Lauren does seem to like voiceless/speechless characters...Coco, Angel Bunny...I'm sure there's more.

I can think of an appropriate onomatopoeia for the snapping, but the fandom has attributed a rather unfortunate euphemism to the term in question.
