If CM's were that nitpicky, Cheerilee would be a botanist or a gardener.
I like how the fanfic Smiling Flowers handles the question. Cheerilee's cutie mark actually does represent a talent for gardening. But because she wants to be a teacher, she's been lying to everyone for years about its meaning. When she finally comes clean about the deception, she comes to a realization: A pony's career and life goals don't have to be dictated by their special talent.

Cheerilee's talent isn't "teaching". It's "helping her students bloom and smile" (I think. Can't remember the excat quote). There are many subtly different talents which each need their own cutie mark. As such, symbolism comes into play a lot.
