Nah, I don't think he's a nervous wreck. Seems pretty calm to me, though he does freak out on occasion, like with the MMMM and when he was making sure that Pinkie was sure that she could take care of Pound and Pumpkin.

Yeah, I wouldn't say nervous wreck so much a showing the stress of having to juggle so many responsibilities. I get the idea that he's kind of a worrywart and Mrs. Cake balances him out.

@ed There was also the fact that he was pretty freaked out in the beginning of the episode, forgetting to shave and scrambling to come up with an explanation for his children's races (which he didn't appear to be entirely sure of himself) though that was pretty understandable.

Yeah, high strung is probably the best way to put it. He's not quite as neurotic as say, Twilight can be. He just gets flustered easily.
